Granola Clusters

 


Equipment Needed

  • Baking sheet
  • Parchment paper
  • Mixing bowl 
  • Whisk or fork
  • Spatula
  • Measuring scale
  • Air tight container

Ingredients

  • 80g old fashioned oats
  • 45g ground flaxseed
  • 40g chia seeds
  • 50g unsweetened coconut flakes
  • 3g ground cinnamon
  • 100g mixed nuts (roughly chopped)
  • 4-5 pitted medjool dates (roughly chopped)
  • 50g tahini
  • 100g honey
  • 2 tbsp vanilla extract
  • 3 tbsp water
  • 50g semi sweet chocolate (optional)
  • 1 tbsp coconut oil

Preparation

Step 1 

Pre-heat oven to 350° F.

Step 2

Mix 1 tbsp flaxseed and 3 tbsp water in a bowl to create a flax egg. Then add, tahini, honey, and vanilla extract in the same bowl and mix until fully combined.

Step 3

Place oats, ground flaxseed, chia seeds, coconut flakes, cinnamon, dates and nuts in  bowl with wet ingredients, and fold using a spatula. Once fully combined, make 14-16 granola bites and place on baking sheet lined with parchment paper. 

Step 4

Bake granola bites for 12-13 minutes. Once cooled down, melt chocolate and coconut oil in a small bowl then drizzle melted chocolate on granola bites. Enjoy!

TIP: Store granola bites in the fridge in air tight container.
