Crispy Roast Chicken
This recipe is simple and mimics fried chicken, you will be surprised by how crispy and finger licking it turns out. Despite best efforts, baked chicken can turn out dry that is why I prefer using chicken thighs in recipes due to the fact that they are quite moist and maintain flavor.
I found that a cooling rack helps achieve crispy and crunchy chicken. If you are craving deep fried chicken and do not want to deal with excessive amounts of oil, you should definitely give this a try and let me know! This is a quick dinner recipe that can be paired with a salad or fries.
Equipment Needed:
- 2 bowls
- Cast iron or skillet
- Cooling wire rack
- Baking tray
- Tongs
- Thermometer
Ingredients:
(This is a forgiving recipe, if you like an extra punch of flavor you can always increase the spice measurements)
- 4 chicken thighs (with or without skin)
- 1⁄2 cup all purpose flour
- 1 egg
- 1/2 teaspoon black pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1⁄2 teaspoon chili powder (optional)
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon turmeric
- 1⁄2 teaspoon coriander powder
- 1⁄4 teaspoon ginger
- 1⁄4 teaspoon ground fennel (optional)
- 1⁄2 teaspoon kosher salt
- 2 tablespoons of extra virgin oil
Steps
- Preheat oven to 450 ° F
- Mix 1⁄2 cup of flour, spices and salt together in a bowl. In a separate bowl place egg and beat it.
- Coat chicken with egg, turn chicken to ensure both sides are evenly coated. Then place the chicken in separate bowl with flour mixture and repeat until all pieces are evenly coated on both sides.
- Heat 2 tablespoons of extra virgin oil on medium heat. Using tongs place coated chicken and sear both sides until golden brown.
- Place the chicken on wire rack (the wire rack needs be seating above baking tray). Transfer the baking tray to the oven and bake at 450° F for 40 minutes.
TIP: Use a thermometer when baking chicken, the temperature should read 165 ° F before consuming. Eating raw chicken puts you at risk of food borne illnesses.
Once the chicken until fully cooked, remove from oven. Let the chicken thighs cool slightly before serving. Enjoy!
