Basque Cheesecake

Equipment Needed:

  • Stand mixer
  • 8-inch spring form pan
  • Parchment

 Ingredients:

  • 320g cream cheese (room temp)
  • 60g granulated sugar
  • 1 tbsp vanilla extract
  • 2 eggs (room temp)
  • 180g heavy cream (room temp)
  • 10g cake flour
  • Butter

Steps:
  1. Preheat oven to 430°F.
  2. Grease spring form pan with butter.
  3. Line spring form pan with parchment paper.
  4. Mix heavy cream and cake flour in a bowl until combined.
  5. In a stand mixer, beat cream cheese on medium-low speed until light and fluffy. Gradually add sugar. 
  6. Scrape the sides of mixing bowl often, then add vanilla extract. Beat in the eggs one at a time at a lower speed, then add heavy cream and cake flour mixture.
  7. Once all combined pour batter into spring form pan, gently tap to get rid of air bubbles.
  8. Bake at 430° F for 45 - 50 minutes, set aside to cool. Once cooled cover with plastic wrap and refrigerate overnight. 
  9. Enjoy!
