Chewy Granola Bars

These granola bars are easy to make. They have a chewy texture, refined sugar free and are perfect for breakfast or a midday snack. 


Chewy Homemade Granola

Equipment Needed
  • 8" baking pan
  • Parchment paper
  • Spatula


Dry Ingredients
  • 250g rolled oats
  • 130g slivered almonds
  • 50g chocolate chips
  • 2 tbsp ground flaxseed
  • 3 tsp cinnamon
  • 1⁄4  tsp ground cloves
  • 1 1⁄2 tsp ground ginger
  • Pinch of kosher salt

Wet Ingredients
  • 90g pumpkin puree
  • 60g honey
  • 113g applesauce (unsweetened) (use sweetened if you prefer)

Steps:
  1. Preheat oven to 350°F / 177° C.
  2. Line baking dish with parchment paper.
  3. Place all dry ingredients in a bowl.
  4. Whisk pumpkin puree, spices, salt, honey, applesauce until fully combined in a separate bowl.
  5. Add wet ingredients into the dry mixture bowl and stir until fully coated.
  6. Place granola mixture into baking dish and pack tightly with spatula.
  7. Bake for 30-35 minutes or until golden.
  8. Cool completely before slicing.

Tip: Store granola in an airtight container.
