Creamy Tomato Bisque Soup
Ingredients:
- 2/3 canned tomatoes (14.5 oz)
- 1 tbsp unsalted butter
- 1 diced onion
- 2 diced carrots
- 1 tbsp fresh basil
- 3 diced celery stalks
- 3 minced garlic
- 1 tbsp onion powder
- 1 tbsp red pepper flakes
- Ground black pepper
- Salt
- 12 oz water / broth
- 1/4 cup heavy cream
Steps:
- Heat sauce pan over medium heat and melt butter.
- Add onions, celery, carrots and garlic. Cook for 6-8 minutes.
- Add tomatoes, spices, water or broth and bring to a boil.
- Reduce heat to low and simmer for 30 minutes. Once done, turn stove off.
- Blend mixture with immersion blender until smooth. ( Be careful if using blender )
- Add heavy cream, salt and pepper to taste.
- Serve with grilled cheese.
