Creamy Tomato Bisque Soup

 



Ingredients:

  • 2/3 canned tomatoes (14.5 oz)
  • 1 tbsp unsalted butter
  • 1 diced onion
  • 2 diced carrots
  • 1 tbsp fresh basil
  • 3 diced celery stalks
  • 3 minced garlic
  • 1 tbsp onion powder
  • 1 tbsp red pepper flakes
  • Ground black pepper
  • Salt
  • 12 oz water / broth
  • 1/4 cup heavy cream

Steps:
  1. Heat sauce pan over medium heat and melt butter.
  2. Add onions, celery, carrots and garlic. Cook for 6-8 minutes.
  3. Add tomatoes, spices, water or broth and bring to a boil.
  4. Reduce heat to low and simmer for 30 minutes. Once done, turn stove off.
  5. Blend mixture with immersion blender until smooth. ( Be careful if using blender )
  6. Add heavy cream, salt and pepper to taste.
  7. Serve with grilled cheese.
