Pear Walnut Cake Recipe

 


Tools

  • 8 inch or 9 inch baking tin
  • Parchment paper

Dry Ingredients
  • 1 cup toasted walnuts
  • 1/4 cup all purpose flour
  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 tsp corn starch
  • 1/8 tsp baking soda
  • 1/4 tsp baking powder
Wet Ingredients
  • 6 tbsp melted butter
  • 1-2 sliced pears without core
  • 1/4 cup vegetable oil
  • 3 eggs

Directions
  • Preheat oven to 300 degrees F.
  • Peel and slice 1 or 2 pears, remove the core(s).
  • Mix brown sugar, ¼ tsp cornstarch and ¼ tsp salt in a bowl.
  • Blend dry ingredients until fine ( walnuts, all purpose flour, ½ tsp salt, ¼ tsp baking powder, and ¼ tsp baking soda).
  • Blend 3 whole eggs, granulated sugar for 2 minutes. Add 3 tbsp melted butter, oil and blend for an additional 2 minutes. Lastly add walnut dry mixture and blend for 30 minutes.
  • Place parchment paper in a baking tin. Pour melted butter over parchment paper then sprinkle brown sugar mixture.
  • Place sliced pear clockwise in tin. Pour batter over pears.
  • Bake for 70 minutes, rotate after 40 minutes.
  • Let it cool for 15 minutes then remove the cake from the baking tin.
  • Serve after 2 hours.
