Pear Walnut Cake Recipe
Tools
- 8 inch or 9 inch baking tin
- Parchment paper
Dry Ingredients
- 1 cup toasted walnuts
- 1/4 cup all purpose flour
- 1/4 cup brown sugar
- 1/2 cup granulated sugar
- 1/4 tsp corn starch
- 1/8 tsp baking soda
- 1/4 tsp baking powder
Wet Ingredients
- 6 tbsp melted butter
- 1-2 sliced pears without core
- 1/4 cup vegetable oil
- 3 eggs
Directions
- Preheat oven to 300 degrees F.
- Peel and slice 1 or 2 pears, remove the core(s).
- Mix brown sugar, ¼ tsp cornstarch and ¼ tsp salt in a bowl.
- Blend dry ingredients until fine ( walnuts, all purpose flour, ½ tsp salt, ¼ tsp baking powder, and ¼ tsp baking soda).
- Blend 3 whole eggs, granulated sugar for 2 minutes. Add 3 tbsp melted butter, oil and blend for an additional 2 minutes. Lastly add walnut dry mixture and blend for 30 minutes.
- Place parchment paper in a baking tin. Pour melted butter over parchment paper then sprinkle brown sugar mixture.
- Place sliced pear clockwise in tin. Pour batter over pears.
- Bake for 70 minutes, rotate after 40 minutes.
- Let it cool for 15 minutes then remove the cake from the baking tin.
- Serve after 2 hours.
