Honey & Jalapeño Cast Iron Cornbread
Equipment Needed
- Cast Iron 10 inch or 8 inch square baking tin
- Large bowl
- Whisk
Ingredients
- 160g yellow cornmeal
- 1 egg
- 240g whole milk
- 1 tsp salt
- 80g melted unsalted butter
- Pinch of salt
- 1 tbsp baking powder
- 120g sifted all purpose flour
- 40ml hot honey (40ml honey and 3-4 sliced jalapeños. See below for full recipe)
Steps
- Pre-heat oven to 400° F.
- Melt butter in cast iron over medium low heat.
- In a large bowl, mix cornmeal, milk, egg, salt, honey, butter until combined.
- Add flour and baking powder and mix. (Try not to over mix)
- Pour batter into cast iron and bake for 24 minutes.
- Enjoy!
TIP: Hot honey is easy to make, all you need is 3-4 sliced jalapeños, 1 sliced habanero pepper. 1 small sliced red and yellow pepper, 3-4 sliced garlic cloves and honey. Place all the ingredients in a jar. The flavors come to life after 5-6 days.
