Honey & Jalapeño Cast Iron Cornbread


Cast Iron Cornbread



Equipment Needed

  • Cast Iron 10 inch or 8 inch square baking tin
  • Large bowl
  • Whisk

 Ingredients

  • 160g yellow cornmeal
  • 1 egg
  • 240g whole milk
  • 1 tsp salt
  • 80g melted unsalted butter
  • Pinch of salt
  • 1 tbsp baking powder
  • 120g sifted all purpose flour
  • 40ml hot honey (40ml honey and 3-4 sliced jalapeños. See below for full recipe

Steps
  1. Pre-heat oven to 400° F.
  2. Melt butter in cast iron over medium low heat.
  3. In a large bowl, mix cornmeal, milk, egg, salt, honey, butter until combined.
  4. Add flour and baking powder and mix. (Try not to over mix)
  5. Pour batter into cast iron and bake for 24 minutes.
  6. Enjoy!

TIP: Hot honey is easy to make, all you need is 3-4 sliced jalapeños, 1 sliced habanero pepper. 1 small sliced red and yellow pepper, 3-4 sliced garlic cloves and honey. Place all the ingredients in a jar. The flavors come to life after 5-6 days.
