Honey Poached Pears

Equipment Needed:
- Parchment paper
- Small saucepan
- Vegetable peeler
Ingredients:
- 2 Anjou pears
- Water
- 2 tbsp honey
- Lemon juice (1/2 a lemon)
- Vanilla bean (1/2 split bean)
- 1 cinnamon stick
- 1 star anise
- 1 or 2 tbsp bourbon
- Pinch of salt
- Roasted slivered almonds
Steps:
- Peel pears with vegetable peeler and remove the cores. Do not cut off the stalks.
- In a saucepan over medium heat place water, honey, lemon juice, vanilla bean, cinnamon, star anise and pinch of salt. Stir and bring to a simmer then add peeled pears.
- Place parchment paper in saucepan which will help submerge the pears.
- Simmer pears for 20-25 minutes, once soft remove from saucepan and set aside to cool.
- Lower heat and continue to simmer liquid until it's reduced or thickened, remove from heat and pour into a separate bowl. Add bourbon to liquid and stir until fully combined.
- Spoon vanilla ice cream or creme anglaise into a two separate bowls. Then place cooled pears upright in bowl, drizzle pears with reduced bourbon mixture. Sprinkle some almonds.
- Enjoy!
TIP: If you do not have an extractor tool to remove the core of the pears, a 1/2 tsp measuring spoon works just as perfect for the job.
