Spiced Marble Bundt Cake (6 inch)
Equipment Needed:
- Stand mixer
- Spatula
- 6-7 inch Bundt pan
- Whisk
- Small saucepan
Ingredients:
- 100g flour
- 2 oz semi sweet chocolate
- 10g unsweetened cocoa powder
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 57g softened butter
- 50g brown sugar
- 113g unsweetened apple sauce
- 1 egg (room temp)
- 2 tbsp vanilla extract
- 56g buttermilk
- 3 tsp cinnamon
- 2 tsp ginger
- 1/4 tsp ground clove
- 3/4 tsp nutmeg
- 3 tbsp all purpose flour
- Powdered sugar
Steps:
- Pre-heat oven to 350° F. Grease bundt pan with cooking spray or shortening, then dust with flour and set aside.
- Over medium low heat place apple sauce, cocoa powder, 20g sugar and whisk until combined. Remove from heat, add semi sweet chocolate chips and mix until smooth.
- In a medium bowl whisk buttermilk, egg and vanilla extract and set aside.
- Place flour, baking soda, baking powder, salt, 30g sugar and spices into a stand mixer bowl and mix on low with paddle. Mix on low and gradually add buttermilk mixture. Scrape the bowl with spatula occasionally.
- Place 1-2 scoops of the batter into bowl with chocolate and mix until combined.
- Spoon 1 scoop of batter, then chocolate mixture into bundt pan and repeat. Swirl the batter with butterknife or chopstick.
- Bake at 350°F for 55 minutes. Once cooled down, sprinkle powdered sugar on bundt cake.
