Bean Curry Recipe
Bean Curry

Tools Needed:

  • Large or medium sauce pan
  • Potato masher
  • 2 bowls

Ingredients:

  • 30oz canned black beans
  • 2 tbsp cumin seeds
  • 14.5oz diced canned tomatoes
  • 1 tsp ground curry powder
  • 1/2 tsp ground turmeric
  • 1 chopped onion
  • 2-3 garlic cloves (minced)
  • 1-2 tbsp olive oil
  • Lemon juice (1/2 a lemon)
  • 1/2 bunch of chopped cilantro
  • 1 1⁄2 cup water
  • Salt
Steps:
  1. Wash the black beans with cold water then drain the beans in a large bowl.
  2. Separate half of the beans into a bowl and mash with potato masher and set aside.
  3. Place sauce pan on stovetop, over medium heat pour olive oil then add cumin seeds.
  4. Add chopped onions and stir occasionally, then add minced garlic. Once onions and garlic start to brown add tomatoes, salt and stir occasionally. Cook for 5-6 minutes. 
  5. Add turmeric, curry powder and lemon juice and cook for 2-3 minutes. Add mashed beans and the rest of the beans into the sauce pan and stir then pour water. Change heat to low, cover pot with lid and cook for 10 minutes.
  6. Sprinkle chopped cilantro over curry and serve with a side rice, quinoa, naan or buckwheat.
  7. Enjoy!
