Creamy Black Eyed Peas
Equipment Needed:
- Large pot with a lid
Ingredients:
- 1 lb dry black eyed peas
- 4-6 cups hot water
- 2 tbsp chicken broth paste (Better Than Bouillon)
- 2 tsp garlic powder
- 1 tsp cayenne pepper
- 2 tsp paprika
- 1 tsp turmeric
- 1 tsp chilli powder
- 2 bay leaves
- 1 chopped onion
- 3-4 garlic cloves
- Salt
- Black pepper
- Frozen okra
- 1 smoked turkey leg
- 2 chopped carrots
Steps:
- Rinse and sort black eyed peas before soaking.
- Soak the beans in a large bowl with cold water overnight. Drain and rinse the black eyed peas before cooking.
- In a large pot, add hot water, chicken broth paste, and soaked black eyed peas. Cover and simmer over medium heat for 30 minutes.
- Uncover pot, add spices, chopped onion, smoked turkey leg, bay leaves and salt. Cover pot, then reduce the heat to low and cook for 60 minutes.
- Add chopped carrots, and frozen okra. Cook for another 60 minutes and stir occasionally.
- Remove smoked turkey leg and bay leaves before serving.
- Enjoy!
TIP: Toss out any beans that float to the surface of the bowl during the soak.
