Creamy Black Eyed Peas Recipe

Equipment Needed:

  • Large pot with a lid
Ingredients:
  • 1 lb dry black eyed peas
  • 4-6 cups hot water
  • 2 tbsp chicken broth paste (Better Than Bouillon)
  • 2 tsp garlic powder
  • 1 tsp cayenne pepper
  • 2 tsp paprika
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 2 bay leaves
  • 1 chopped onion
  • 3-4 garlic cloves
  • Salt
  • Black pepper
  • Frozen okra
  • 1 smoked turkey leg
  • 2 chopped carrots
Steps:
  1. Rinse and sort black eyed peas before soaking.
  2. Soak the beans in a large bowl with cold water overnight. Drain and rinse the black eyed peas before cooking.
  3. In a large pot, add hot water, chicken broth paste, and soaked black eyed peas. Cover and simmer over medium heat for 30 minutes.
  4. Uncover pot, add spices, chopped onion, smoked turkey leg, bay leaves and salt. Cover pot, then reduce the heat to low and cook for 60 minutes.
  5.  Add chopped carrots, and frozen okra. Cook for another 60 minutes and stir occasionally. 
  6. Remove smoked turkey leg and bay leaves before serving.
  7. Enjoy!
TIP: Toss out any beans that float to the surface of the bowl during the soak.
