Herb & Spice Baked Chicken

 


Equipment Needed:

  • Oven safe casserole
  • Blender or food processor
  • Plastic wrap
  • Meat thermometer

Ingredients:

  • 4-6 Bone in chicken thighs (skinned)
  • 1 can (411g) diced tomatoes (drained)
  • 1/4 red roughly chopped onion
  • Parsley
  • Mint
  • 1 tbsp lemon juice
  • 1 tsp chilli flakes
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/4 tsp ground cinnamon
  •  1 1⁄2 tsp salt
  • 1 tsp ground black pepper
  • Olive oil
Steps:
  1. Blend herbs, tomatoes, onion and spices until smooth.
  2. Place chicken thighs in casserole and drizzle with olive oil. Pour in herb and spice marinade into casserole and massage chicken.
  3. Cover casserole with plastic wrap and marinate in fridge for 4 to 6 hours. 
  4. Pre-heat oven to 400°F.
  5. Bake chicken for 45-50 minutes or until internal temperature is 180°F - 190°F.
  6. Enjoy!
TIP: Make small cuts in chicken thighs before marinating for more flavor.
