Herb & Spice Baked Chicken
Equipment Needed:
- Oven safe casserole
- Blender or food processor
- Plastic wrap
- Meat thermometer
Ingredients:
- 4-6 Bone in chicken thighs (skinned)
- 1 can (411g) diced tomatoes (drained)
- 1/4 red roughly chopped onion
- Parsley
- Mint
- 1 tbsp lemon juice
- 1 tsp chilli flakes
- 1 tsp paprika
- 1 tsp cumin
- 1/4 tsp ground cinnamon
- 1 1⁄2 tsp salt
- 1 tsp ground black pepper
- Olive oil
Steps:
- Blend herbs, tomatoes, onion and spices until smooth.
- Place chicken thighs in casserole and drizzle with olive oil. Pour in herb and spice marinade into casserole and massage chicken.
- Cover casserole with plastic wrap and marinate in fridge for 4 to 6 hours.
- Pre-heat oven to 400°F.
- Bake chicken for 45-50 minutes or until internal temperature is 180°F - 190°F.

TIP: Make small cuts in chicken thighs before marinating for more flavor.
