Pickled Red Onions
- Airtight container
- Small saucepan
- Sharp knife
- Bowl
- Plastic wrap
Ingredients:
- 1 medium onion
- 1/4 salt
- 2 tbsp sugar
- 251g distilled white vinegar
- 1 tbsp coriander seeds
- 1 tbsp black peppercorns
Steps:
- Thinly slice red onion lengthwise and place in a bowl. Add coriander seeds and black peppercorns into the same bowl.
- In a small saucepan, pour vinegar, salt and sugar and stir over medium heat until dissolved.
- Bring vinegar mixture to a simmer, then pour over onions in the bowl and cover with plastic wrap for 30 to 60 minutes.
- Transfer to airtight container and use immediately or store in fridge.
