Peanut Butter & Dark Chocolate Energy Balls



Ingredients:

  • 120g almond meal ( set 2 tbsp aside)
  • 3 tbsp ground flaxseed
  • 1 tbsp ground cinnamon
  • Pinch of salt
  • 1 tbsp unsweetened cocoa powder
  • 1-2 oz finely chopped dark chocolate
  • 60-70g peanut butter 

Steps:
  1. Mix almond flour, salt, flaxseed, cinnamon, dark chocolate and peanut butter in a bowl until it resembles chunky clay. Form mixture into small balls using your palms (makes 8-10 balls). 
  2. Mix the remainder of the almond meal and cocoa powder in a separate bowl or small plate. Roll the balls in the almond meal and cocoa powder mixture, then chill in fridge for 1 hour.
  3. Enjoy!
